1. What is Yokogawa Distillery?
Yokogawa Distillery produces shochu in Kirishima City, Kagoshima Prefecture.
They distill by unique methods such as “far-red roasting method,” “PH value conversion distillation method,” and “production of sweetpotato koji and shochu using sweetpotato koji”.
Distillery Features
A distillery surrounded by nature
Yokogawa Distillery is located in the mountainous area of the Kirishima mountain range, surrounded by rich natural Kirishima trees. The altitude of the distillery is approximately 300 meters above sea level. The temperature difference between day and night is extreme, so the whisky can be expected to mature quickly.
High quality brewing water
The Kirishima mountain range is a treasure house of good quality water that is so abundant that it is said to be a large source of water. Our distillery, which uses groundwater from the Kirishima mountain range, is blessed with an abundance of natural water that has passed through volcanic gravel beds, the Shirasu plateau, and dissolved tuff. All of our products are brewed and watered with “Aoki Mizu,” natural water that boils from the foothills of the Kirishima Mountains. This water is rich in magnesium and minerals and has a shining blue color when stored in tanks.
Abundance of aging casks
In addition to sherry and bourbon casks, we plan to partner with wineries in Japan and abroad to age our whisky in a variety of casks, including wine casks, in order to create a delicious Japanese single malt whisky that can be enjoyed around the world.
Fermentation and distillation technology cultivated through shochu distillation
Yokogawa Distillery has a history of over 75 years as a shochu distillery, and the fermentation techniques and knowledge of potato shochu that have been continuously cultivated have been passed down to the craftsmen of our generation. Craftsmen who have mastered the fermentation of sweetpotato, which is said to be more difficult than that of barley, also demonstrate their mastery in the fermentation and distillation of barley malt, and work day and night in production and research to create delicious whisky.
