6. About the Hakushu Distillery
Suntory Hakushu Distillery
| Location | 2913-1 Torihara, Hakushu-cho, Hokuto City, Yamanashi Prefecture 408-0316 |
| Start of Operations | 1973 |
In 1973, marking exactly 50 years since Japan first began producing whisky, the Hakushu Distillery was completed in a lush forest spanning approximately 820,000 square meters at the foot of Mount Kaikomagatake in the Southern Alps, a region blessed with abundant natural beauty.
Enveloped by the humid atmosphere of the forest, Hakushu Malt is made using pure, soft natural water from the Southern Alps, filtered through granite.
Upholding the concept of a “Forest Park Distillery,” the distillery has continued to protect and nurture the rich natural environment, including the establishment of a “ Bird Sanctuary” on the premises. Matured over a long period amidst the distinct seasonal changes unique to Japan, this process is the source of Hakushu’s aromatic and crisp flavor.
Using a diverse range of pot stills of varying sizes and shapes—including two new pot stills introduced in 2014—the distillery produces different types of base spirits. The aging warehouse features a high-ceilinged rack system. Temperature, humidity, and other conditions are not managed manually at all but are left to natural processes.
